INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the coconut oil over medium heat. Add the chopped onion and minced garlic. Sauté until translucent, about 3-4 minutes.
  3. Add the sliced mushrooms to the skillet and cook until they start to release their moisture, about 5 minutes.
  4. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  5. Add the riced cauliflower to the skillet and cook for another 5 minutes, stirring occasionally, until the cauliflower is tender.
  6. In a separate bowl, mix together the coconut cream, bone broth, dried parsley, dried thyme, salt, pepper (if using), and optional nutritional yeast.
  7. Add the drained tuna to the skillet with the cauliflower and vegetable mixture. Pour the coconut cream mixture over the top and stir until everything is well combined.
  8. Transfer the mixture to a baking dish and spread it out evenly.
  9. Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the top is slightly golden brown.
  10. Remove from the oven and let it cool for a few minutes before serving.
  11. Garnish with chopped fresh parsley before serving.
